Lemon Poppyseed Loaf

INGREDIENTS//

1 ¾ cup flour

1 cup sugar

⅔ cup vegetable oil (or any neutral oil)

¾ cup milk/oat milk

3 eggs

1 ½ tsp baking powder

¼ tsp baking soda

¼ tsp sea salt

Juice of 1 lemon (5 tbsp)

2 heeping tsp of Lemon Zest

2 Tbsp of Poppyseeds

Frosting: ½ cup powdered sugar, 4 tsp lemon juice




TO MAKE //

1| Preheat oven to 300 degrees.

2| Combine lemon zest and sugar in a large bowl and mix with your fingers until sort of a grainy sand mixture. Then whisk in wet ingredients (milk, lemon juice and eggs).

3| In a separate bowl, whisk together flour, baking powder, baking soda and salt.

4| Slowly whisk dry ingredients into the wet ingredients, then whisk in oil and poppy seeds.

4| Line rectangle loaf pan with vegetable oil, or spray, and parchment paper so that an inch of parchment paper is coming out of the short ends (image below). Pour in the batter and bake for ~ 1 hour (until a toothpick inserted in the center emerges clean). Let cool for 20 minutes.
